    Chocolate cupcakes with Nutella frosting!

    Nutella Buttercream Frosting
    February 5th, 2011YIELD: enough buttercream to frost 24 cupcakes
    INGREDIENTS:
    2 sticks unsalted butter, softened
    1 13-ounce jar of Nutella
    pinch of fine grain sea salt
    1 tablespoon clear vanilla extract
    1.5 pounds confectioners’ sugar, sifted
    6-8 tablespoons heavy cream or milk

    1. In a large mixing bowl, cream butter and Nutella until well combined, thick and fluffy, about 5 minutes. Slowly add in confectioner’s sugar, and continue mixing until well blended.

    2. Add salt, vanilla, and 3 tablespoons of heavy cream or milk. Blend on low speed until moistened. Add an additional 3-5 tablespoons of heavy cream or milk until you reach the desired consistency. Beat at high speed until frosting is smooth and fluffy, about 3 minutes

    MaryMary — that sounds like a cupcake you could count as breakfast in the morning! I approve.

    Two red velvets, but with different types of frosting — interesting.

    I’m a fan of German chocolate anything! Pecans and coconut in the frosting is as good as it gets.

    Susan — I don’t think I’ve ever had a German chocolate anything, yet every time I see it in cake or cupcake version I think to myself that looks good!

    Shannon – snickerdoole cupcakes? There isn’t perchance a recipe that goes with this?

    Andrea M. – I’m not sure you’re allowed to call yourself vanilla (in any sense of the word) if you’re invoking the devil! ;)

    I like topping a chocolate stout cupcake with either cream cheese frosting or the Midnight Ganache from Rose Levy Beranbaum’s ROSE’S HEAVENLY CAKES (it’s sort of a bittersweet one with a caramel base). Francois Payard puts yuzu juice in his cream cheese frosting, and I’m tempted to try that with calamansi juice (but I’m afraid it will curdle, and I don’t know what cake to pair with it). Once in a blue moon I’ll make the Snackie Cake filling from the old CHOW magazine (might be Googleable) and fill devil’s food cupcakes with that before frosting them, though getting the pastry bag out is always a pain…

    My favorite is probably red velvet with cream cheese frosting, though my sister made sangria cupcakes for my birthday one summer that were really good too.

    These all sound good. For me, I like the basic chocolate cake w/ chocolate frosting. I’m gonna try a Texas Sheet Cake (http://southernfood.about.com/od/chocolatecakes/r/bl10731d.htm) with a little meringue powder to stiffen the frosting and see how this turns out as cupcakes. Love it as a regular cake – it has buttermilk and a couple of teaspoons of cinnamon in the recipe. It can almost be mistaken for moist brownies.

    Another vote for red velvet :)

    A little bit of cinnamon always seems to jazz up any recipe.

    White with buttercream frosting. I’m simple my favorite come from SAMs Club they are just so moist, sweet, and delicious. Now you have me craving one
